ARABIAN HONEY CAKE
INGREDIENTS
Flour                                  450 grams
Bee’s honey                       225 grams
Sugar                                 225 grams
Eggs                                    03 numbers
Ginger powder                    01 teaspoon
Cinnamon powder              01 teaspoon
Mace powder                       ½ teaspoon
Lemon rind                          ½ number
Candied peel                     110 grams
Corn oil                               03 tablespoons
Bicarbonate of soda             01 teaspoon
Almond or Cashew flaked  55 grams
Method

Warm the honey and corn oil together. Sieve the flour with the soda and spices thrice, into a bowl. Make a hollow in the center and pour into it beaten eggs, candied peel, lemon rind, sugar and lastly the honey mixture. Knead to a firm dough, turn into a shallow greased baking tin, sprinkle with the almonds or cashew and bake in a pre heated oven set at 275 °C for one (01) hour.
